Hot Smoked Salmon Lettuce Boats

These hot smoked salmon lettuce boats are super simple to assemble and fun to eat, add some fresh mango and a squeeze of lime to bring these little salad boats to life!

Hot Smoked Salmon Lettuce Boats

  • 1 Baby Gem Lettuce
  • 160 g Hot Smoked Salmon
  • 1/2 Cucumber
  • 4 Radishes
  • 250 g Tomatoes ((small, cherry))
  • 1 Mango
  • 1 Lime
  1. Separate, wash and dry the baby gem lettuce leaves and arrange on a platter.
  2. Halve the cherry tomatoes, slice the radishes and cucumber, chop the mango and flake the hot smoked salmon.
  3. Fill each leaf boat with the prepared vegetables, top with flakes of hot-smoked salmon and pieces of mango, and squeeze over the lime.
  • Serve with new potatoes dressed with melted butter and chopped fresh mint.
