Mango & Cucumber Salsa

Mango & cucumber salsa is a simple and yummy way to boost up lunches or suppers. You can pop some on top of salmon, cod or chicken and this can transform these into a lovely sweet, crunchy and tangy deliciousness. You can add some to a lunch box as a salad for your children to enjoy at school.

The orange colour of the mango is a great source of beta-carotene. One cup provides your RDA for vitamin C and 35% of your Vitamin A needs. It is also rich in potassium. The vitamin B6 in  mangoes is a vitamin required for GABA production in the brain. This is the “zen-like” hormone that keeps us calm. Food sources of GABA may be a great help to hyper children with overactive minds.

Coriander (also known as cilantro) has been used as a gentle detoxification agent and can mop up unwanted toxic metals in the body.  It is a lovely fresh taste that many children enjoy and can be used in many different recipes.

Mango & Cucumber Salsa

  • 1 Mango
  • 1/4 Cucumber
  • 1/2 Lime
  • 2 tbsp Coriander ((fresh leaves, chopped))
  • Chilli ((red, optional if you like a spicy kick))
  1. Peel and chop the mango and cucumber into small cubes.
  2. Squeeze on the juice of half a lime
  3. Sprinkle on chopped fresh coriander leaves
  4. Add some red chilli if you like a spicy kick to your food (not recommended for young children unless you are sure they love spice!)
