Raspberry Snack Attack Balls

  • 150 g Medjool Date ((pitted))
  • 30 g Ground Almonds ((or sunflower seeds))
  • 40 g Porridge Oats
  • 10 g Chia Seeds
  • 2 tbsp Honey ((or rice syrup))
  • 2 tsps Cacao Powder
  • 7 g Freeze-dried Raspberries ((approx.))
  • Desiccated coconut ( (or cacao/cocoa powder to decorate))
  1. Blitz all of the ingredients in a food processor for about a minute until ground up.
  2. Grab a walnut size piece of dough and roll into a ball with your hands and repeat.
  3. These are delicious on their own, or you can roll in some desiccated coconut or cacao/cocoa if you prefer.
  4. Store in the fridge for up to 5 days, or freeze. They defrost very quickly within an hour.

When rolling into balls, to avoid getting sticky doughy fingers, you can dampen your hands with a little water. This way you also get a lovely smooth finish.

Gluten-free: Use gluten-free oats.

If your school has a nut-free rule, then simply swap the ground almonds for sunflower seeds.
