Banoffee Frozen Bites

These little gems are such a great snack idea to have sitting in your freezer for those hungry moments when you or your kids crave something sweet and nourishing. Bite through the chocolate coating to enjoy a gorgeous banana and salted toffee stack in the middle made from dates and almond butter.

These are snacks with a little boost of omega 3 from the hemp seeds as well as minerals and healthy fats from the dates and nut butter.

Suitable from age three years plus, as they are a little tricky to bite into when fully frozen.

Banoffee Frozen Bites

Centre

  • 4 Bananas
  • 8 Medjool Date ((pitted & soaked in water for 1 hour))
  • 1 tbsp Almond Butter
  • 0.5 tsp Vanilla Extract
  • 1 pinch Sea Salt
  • 3 tsp Hulled Hemp Seeds

Coating

  • 150 g Chocolate ((dark or milk cooking chocolate))
  • 1 tsp Coconut Oil ((use a neutral-flavoured one such as Biona))
  1. Make the salted date caramel by blitzing the pitted dates, almond butter, vanilla essence and salt in a mini blender. Add 3-4 tbsp of the liquid from the soaked dates. Blitz again until you get a smooth caramel-like consistency, then set aside.
  2. Chop the bananas into small circles about 5mm thick and add a dollop of date caramel to half of them. Sprinkle with hulled hemp and pop another banana round on top to make a sandwich. Place these in the freezer on a tray for a couple of hours, or overnight.

  3. Melt the chocolate and coconut oil together then dip the frozen banana bites into the melted chocolate to cover them. Often the chocolate sets straight away, otherwise pop the chocolate covered banana bites back into the freezer for 15-20 minutes to set.
  4. Store in the freezer bagged or in an airtight container for up to 3 months. You can eat these frozen direct from the freezer or you can let them defrost for a couple of minutes first before taking your first bite.
  • You can use other nut butters like cashew, hazelnut, or peanut. You can also try using delicious Resilient Nutrition Calm Cinnamon and Cashew Nut Butter instead of the almond butter for an extra delicious bite with a little bit of calm thrown in!
  • Nut Free – swap almond butter for tahini (sesame paste) or sunflower butter
  • Dairy Free – use a vegan chocolate like Moo Free

  1. Made these a couple of days ago. Absolutely delicious! Didn’t have any nut butter at the time so just threw in a small handful of cashews with the dates and the caramel came out fine. Also didn’t have any hemp seeds so used a small amount of sunflower seeds. Perfect for when you want a quick snack or something sweet after lunch.
